Domaine les Aurelles: Elegant wines from the Languedoc

Situated in Nizas, in between Montpellier and Beziers, le Domaine les Aurelles is the epitome of the elegance of the region with very sophisticated wines ready to be guarded.

History

Basile Saint-Germain and his wife Caroline literally fell in love with Domaine les Aurelles, located on the Pezenas land in 1955. The couple was looking for a property with old vines. Originally from the Medic, Basile Saint-Germain had worked for two years at Chateau Latour. He and his wife had worked together in Cognac. Together, they benefited from a richness of knowledge and toughness instilled from the Medoc in order to adapt to their new territory: Languedoc.

The terroir of Domaine Les Aurelles

The domain is adept for photo-biology, which is the study of plants to avoid using fertiliser. The properties pride themselves in showing respect for the environment. Even though, they aren’t certified organic, every year they demand lab analyses of their vines right before the wine is ready to be sold.  Determined to prove the perfect sanitary state of their wines, this process allows the growers to display the absence of pesticides, fungicides, herbicides etc.… and thus going farther than standard organic certifications.

The Domaine Les Aurelles extends over 9 hectares of vines planted on hillsides and composed of very ancient quaternary covered with sheets of pebble. The presence of Basaltic rocks (produced from the Escandorgue volcanoes) is specific to this domain. These rock produce the strong mineral aspect of the wines, which is one of its most striking characteristics. At the domain they have one philosophy: We have small-scale harvesting techniques (between 10 and 20 hl/ha): the yield is done by hand, and transported in baskets, and fermentation is done at low temperatures. All of this, is to avoid being too rough on the grapes and to ensure that the final product lives up to its potential.

The Purest Wines

The vinification materials are made to raise and produce quality wines. The stainless steel vats for vinification and ageing are sprayed with hot water. The vats are taller than they are wide and allow the diffusion of grape skins in the juice. The steel coating is equally favours the conservation of the wines. The structure and the quality of the red wine tannin from Domaine Les Aurelles allow them to be aged in vats. For the vinification of white wines, the long pressurisation and delicate process requires complete and total attention. All of the wines from the domain are aged for 12 to 48 months before their bottling. It’s thanks to a very honest pure vinification process that Domaine Les Aurelles offers superb and fine wines, with extraordinary clarity and is a pleasure for all of the senses.
